Homemade Pizza * Peanut Butter Rice Casserole * Vegan Burritos * Pan Fried Breaded Tofu * Sweet and Sour Tofu Dumplings *Pizza Crust: 1 1/2 t. dry active yeast * 1/2 c warm water * 1 1/2 c flour (combination of rye, barley and buckwheat flours is especially good!) * 1 T oil
Dissolve the yeast into the warm water. Let sit for a few minutes. Add flour and oil. Knead until it is satiny and smooth, about 3 minutes. Put the dough into an oiled bowl, then flip it over so the top is now oiled, and cover the bowl with a damp cloth. Leave in a warm place to rise for about 40 minutes, until approximately doubled in size.
Making the pizza: Spread the dough over an oiled pizza pan or any other oiled baking pans. Bake for 8-10 minutes at 400 degrees. Then take the crust out of the oven, spread any bottled spaghetti or pizza sauce over the top of the crust, add sliced vegetables, and sprinkle cheese on top then place back in the oven for 3-7 minutes. Kids especially like helping make this dish.
Kids seem to like this one a lot and it is REALLY easy and quick to make!
Mix together in a bowl:
2 c. cooked rice, 2 c. grated carrots, ½ c peanut butter, 1 onion, chopped, ½ c. water with dash of tamari or Dr. Bronner's or Bragg's bouillon, 1 clove garlic, minced, 2 bay leaves, broken in ½, ¼ t. salt, ½-1 c. snow peas, 1-2 fresh tomatoes, chopped.
Press into an oiled casserole pan. Bake at 350 degrees for 30 min covered, then 15 more minutes uncovered. Yum!
(This stuff is great as a dip with tortilla chips, or as burrito or taco filling)
Boil 1 1/3 cups water. Take pot off stove and add 1 ½ cups (Texturized Vegetable Protein, found at most health food stores) TVP. Let soak for 10 minutes. After 10 min., put 5 T. oil in a pan, and sauté one chopped medium onion with the soaked TVP. Add a little salt and pepper, a dash of chili powder, a little garlic and some soy sauce. Set aside.
Simmer together:
2 cups tomato sauce, ½ t. salt, 1 t. chili powder, ½ t. pepper, 4 cloves or 2 t.
garlic powder, 1 T. sugar.
Make Spanish rice from any cookbook, or you can use a boxed mix, like Bearitos Spanish rice, and just throw it in your rice cooker like normal rice to cook.
Now, mix together: The TVP/onion sauté, the simmered tomato sauce, the Spanish rice, one 16 oz. Can of spicy Bearitos Refried Beans, and one 16 oz. can of diced tomatoes. Enjoy! We never can keep this around. It gets eaten quickly.
Slice tofu into ¼" to ½" slices. In a bowl, mix ½ c cornmeal, ½ t salt, ½ t paprika, a titch of pepper and garlic powder. Heat oil in a frying pan. You can dip tofu in soy sauce first, or you can just put the tofu right into the breading mixture. Once coated, put into the frying pan. These are delicious.
Tofu Dumplings - 1 1/2 lbs. firm tofu ** 2 T. peanut butter ** 3 T. soy sauce ** 8 green onions, sliced ** 1 1/2 c. sliced mushrooms ** 1/4 c. parsley, chopped ** 1/2 c. water chestnuts, sliced
Mix together all ingredients until mashed and mixed well. Shape into a bunch of 2 inch balls, and bake in a 375 degree oven for 45 minutes or until solid and golden.
Sweet and Sour Sauce - 1 1/2 c. pineapple, orange or apple juice ** 1/4 c. maple syrup, honey or brown sugar ** 1/3 - 1/2 c. cider vinegar ** 1/4 c. soy sauce ** 1 clove garlic, minced ** 2 T. cornstarch dissolved in 2 T. cold water
Mix all sauce ingredients (except the cornstarch in water) together in a saucepan and bring to a slow boil. Stir in dissolved cornstarch in water slowly and stir until sauce is clear and thick.
Pour sauce over dumplings and Enjoy! Add some rice and this is a nice meal.
